Chocolate Mousse(4 Portions)
Ingredients:

120
gr
Couverture
12

gr
Unsalted butter
Hot water

40
gr
Egg yolks
40
gr
Sugar
2 leaves of gelatine

240
ml
Fresh Cream

Procedure:
1.
1.Melt the couverture at the lunch time over the bain-marie.
2.
2.Soaking the gelatine in the ice water.
3.
3.Whip the cream until semi-whipped, keep in the fridge.
4.
4.Dissolve the butter and add the melted butter into the melted couverture.
5.
5.Add a little bit hot water get thick paste. (shine)
6.
6.Whip egg yolks and sugar over bain-marie until ribbon stage- mixture should not exceed 40℃
7.
7.Mix the chocolate and the egg mixture together.
8.
8.Melt the gelatine ,and add it into the mixture.
9.
9.Fold the cream into the mixture. Put the mixture into fridge.

10.While the Mousse is set, scoop in the chocolate basket and decorated with cream and fruits.
